Allium fistulosum. Negi is one of the kyo-yasai — traditional Japanese heirloom vegetables dating back to the Edo period in seventeenth century Kyoto. This onion is technically a scallion, but they can be large enough to resemble leeks. This is why they are sometimes confusingly called Welsh onions. The hollow leaves grow to 60cm (24") long, and the white shanks can be extended by hilling up soil around them as they grow. Ippon Negi onion seeds produce a vegetable with crisp texture and mild flavour. They do not form bulbs at the root end.
