Amaranthus hypochondriacus. CERTIFIED ORGANIC! Grow this ancient Aztec grain like quinoa for nutritious, gluten-free grains that mature at the end of summer. The substantial plants grow 1.5-2m (5-6') tall, with flamboyant plumes of attractive burgundy flowers followed by copious white seeds. Burgundy Organic amaranth seeds are a show stopper in any garden. The immature leaves are also edible, and have a distinctive, nutty flavour that works well raw in salad mixes or briefly steamed. Amaranth grows well in raised beds, and it responds well to hot weather. The deep red foliage and the remarkable flower clusters really make this plant stand out in the garden setting.
